One night, in my sleep, I heard the word “carrageenen.” Good grief – what? Although I had heard of the word as an ingredient in food (whether you like or don’t like it is not the point of this story), I had no idea what it was. So I looked it up (see above). It may not be the main ingredient, or the sexiest ingredient, but it is critical to the overall cohesiveness and, ultimately, the experience of the food.
Carrageenan is used as a thickening and stabilizing agent. Is there a person in your team who functions as the glue or stabilizer? Maybe it’s even you. Have you underestimated that contribution?
