Healthy eating is about creating the best internal and external state of your body, not just about weight. Your organs process anything you take in, food, drinks, toxins in the air. They all affect internal functioning. The deadly sins (wheat, white flour, sugar, alcohol) negatively affect your endocrine system, brain, and other organs. (You can read more in depth about these in lots of places.)
Healthy eating does not have to be boring. If it is, you’re doing it wrong. Try eating something different once in a while. Don’t feel compelled to change everything all at once. Other than issues that come from just plain eating too much, pay attention to your body to discover what it likes and does not like. My body does not like wheat. I don’t have celiac or gluten intolerance, but I do notice I feel more down or at least flat emotionally the day after I’ve had a lot of carbs/bread. It took years before I made that connection and so I lived with it. Now, I try to think before I eat.
As for vitamins, I personally notice a difference between when I take certain vitamins versus when I don’t. I realize there are disagreements about the benefits of various vitamins and supplements, but run the test on yourself. Take a new one for a while and notice what changes. Then stop taking it for a while and notice what changes. Finally, reintroduce it again and … notice what changes. It’s an ABA design with an n=1, so you might not be able to make claims about what works for everyone else, but you will at least have a better idea of what seems to work, or not, for you.
Finally, keep notes. What did you eat and how did you feel later that day or the next day? If you start to notice a pattern, you can think about what changes to make to improve your overall health.
